Her book, “Mother Jane’s Prescriptions for Hunger” is chocked full of wonderful, tried and true recipes.


Banana-Nut Bread

Prep Time: 15 min. Baking Time:1 hour Servings: One Loaf Oven: 350 F


  • 3 ripe Bananas
  • 2 Eggs (slightly beaten)
  • ½ cup Crisco or ½ cup Melted Butter (unsalted)
  • 1 cup Sugar
  • 1 teaspoon Lemon Juice
  • 2 cups Flour
  • 1 teaspoon Baking Soda
  • 1 teaspoon Baking Powder
  • ½ teaspoon Salt
  • 1 cup Pecans (chopped)


  • Mash bananas and add slightly beaten eggs
  • Add Crisco, Sugar, and Lemon Juice to Banana mixture
  • Sift Flour, Soda, Baking Powder, Salt together. Add to banana mixture
  • Mix well and add Pecans
  • Grease a 9x3 inch loaf pan and pour batter into it
  • Bake at 350 degrees F for about one hour
  • COOL on rack
